VESSEL 75

As some of you may know, I have been recently uprooted and transplanted down south in soggy Seattle. I am now part of a team that is in the process of opening several bars, VESSEL being the first of them.

The following is a great autumn drink which also happens to be VESSEL’s signature cocktail. While at Lumière, my drinks with foam never really took off, but here in Seattle, the VESSEL 75 has quickly become the bar favorite.

VESSEL 75
3 oz Woodford Reserve Bourbon
3 dashes Peychaud’s bitters
1 bar-spoon simple syrup

stir the above ingredients in an iced Boston shaker and strain into a rocks glass
top with maple syrup foam and orange zest

On February 3, 1916, Skinner & Eddy Shipyard starts constructing ships. During World War I, the firm builds 75 vessels, becoming the largest shipyard in Seattle. The shipyard is located south of Seattle’s Pioneer Square in the area known as SODO.

The foam is made from maple syrup in recognition of the maple trees which line 5th avenue. The drink is called the VESSEL 75 in reference to VESSEL’s location within the historic Skinner building
